The Languedoc Roussillon region is famous for it’s local dishes.  Languedoc has a great reputation for gastronomic delights that will not break the bank.  Seiche a la Plancha (local cuttlefish cooked on a hotplate or stone), moules farci (stuffed mussels), Gardianne de taureau (delicious rich beef stew), Tielle Setoise (a seafood pie), and not forgetting the Bouzigues oyster farms. With a heavy Spanish influence, you will also find many places serving their own version of paella.
